Our recipe:
- Beat 8 eggs, strain,
- Shuck approx. 15 oysters, drain and save liqueur
- rough dice oysters
- Add oysters and liqueur to the eggs.
- Steam
- finish with a splash of sesame oil, and a garnish of scallion, cilantro or thyme
